Leftover cabbage? We got you. If you remember that roasted cabbage and sunflower tahini recipe we made last week here, you’ll also remember how much extra cabbage we had sitting around. Instead of letting it go to waste, we flipped the fridge and remixed it into something brand new.
Enter: Crispy Curry Cabbage Topper.

The Inspiration: Trini Corn Soup Meets a Crunchy Upgrade
We had a pot of Hotsteppa Trini Corn Soup bubbling away and were thinking about toppings. Traditionally, crispy onions would be the move, but since we had all this extra cabbage, we thought—why not crisp it up instead?
The result? A golden, flavorful, slightly smoky cabbage topper that adds crunch, spice, and depth to anything it touches. Even if you’re not a fan of cabbage, this remix might just convert you.

How to Make Crispy Curry Cabbage Topper
What You’ll Need:
- Leftover roasted or cooked cabbage
- A pinch of salt & pepper
- 1 tsp nutritional yeast (a.k.a. “nooch”)
- ½ tsp curry powder
- Olive oil for frying
The Method:
- Heat a pan over medium-high heat and add a little olive oil.
- Toss in the leftover cabbage and season with salt, pepper, curry powder, and nutritional yeast.
- Fry until crispy and golden brown, about 5-7 minutes, stirring occasionally.
- Remove from heat and use as a crunchy topper for soups, stews, or even salads.

Crispy Curry Cabbage Topper
Equipment
- 1 Frying pan
Ingredients
- pinch salt
- pinch pepper
- 1 tsp nutritional yeast
- ½ tsp curry powder
- ½ small cabbage, cut into wedges
Instructions
- Fry the leftover roasted cabbage in a little bit of olive oil.
- Add salt, pepper, curry powder and nutritional yeast, while tossing cabbage over heat.
- Fry til edges are browned and crispy.
