Trini Green Seasoning – Our Ultimate Flavour Bomb

Every pot of soup, stew, or curry needs a secret weapon. For us, it’s Trini green seasoning—that bright, herbaceous, garlicky blend that transforms anything it touches.
We followed Cooking with Ria’s recipe and blended cilantro, culantro, garlic, peppers, and aromatics into a punchy green paste. Kept it in the fridge for the week, and used it in corn soup, marinades, and quick sautés.

Trini Green Seasoning – Our Ultimate Flavour Bomb
Equipment
- 1 Cutting board
- 1 Food Processor (can use pestle and mortar but will take a long time)
- 2 Mason jars
Ingredients
- 1 bunch cilantro
- 1 bunch culantro, aka shado beni
- 2 garlic heads
- 6 pimento peppers
- 1 bunch thyme, remove heavy stems
- 4 scallions, green onions
- 1 bunch parsley
- 1 onion, (optional)
- 1 scotch bonnet, (optional) de-seeded or not; depends on how spicy you like it
Instructions
- Wash, drain and roughly chop herbs, onion, peppers, and other ingredients.
- Place all ingredients in a food processor and pulse until fine. Add a little bit of water to loosen mixture up. Scrape down sides if needed.
- Place in a glass jar, close tightly and store in the refrigerator. Will stay 1-2 weeks.
- Alternatively, pour into ice trays, freeze. Remove cubes, place in a resealable bag and store in the freezer, until ready to use.
