Quick Mixed Berry Jam Compote
Equipment
- 1 Pot
- 1 Zester
- 1 Immersion blender
Ingredients
- 2 ½ cups mixed red berries, strawberries, raspberries, cranberries, currents, etc.
- ½ cup sugar
- ½ cup cranberry juice
- 2 tbsp bottle lemon juice
- 1 tbsp lime juice
- 1 tsp lemon zest
- 1 tsp lime zest
Instructions
- Add sugar, mixed berries, lemon juice, lime juice and cranberry juice to a pot. Gently stir the berry mixture and bring to a boil over medium-high heat. Reduce heat to a soft boil and cook without lid.
- Add lemon and lime zests and stir, about 20 minutes or until the liquid has reduced significantly.
- When mixture has thickened, remove from heat and let rest.
- *optional* if a puree is desired , once cooled, place mixture in blender for 2-3 mins.
- Seal mixture in sterilized jars. Boil sealed jars for 6-10 mins. Store in fridge for up to 2 weeks.
