Quick Mixed Berry Jam Compote
Easiest one pot jam recipe out there. Tart with less sugar but full flavour.

- 2 ½ cups mixed red berries strawberries, raspberries, cranberries, currents, etc.
- ½ cup sugar
- ½ cup cranberry juice
- 2 tbsp bottle lemon juice
- 1 tbsp lime juice
- 1 tsp lemon zest
- 1 tsp lime zest
Add sugar, mixed berries, lemon juice, lime juice and cranberry juice to a pot. Gently stir the berry mixture and bring to a boil over medium-high heat. Reduce heat to a soft boil and cook without lid.
Add lemon and lime zests and stir, about 20 minutes or until the liquid has reduced significantly.
When mixture has thickened, remove from heat and let rest.
*optional* if a puree is desired , once cooled, place mixture in blender for 2-3 mins.
Seal mixture in sterilized jars. Boil sealed jars for 6-10 mins. Store in fridge for up to 2 weeks.
