White Bean Mash (Inspired by Rachel Ama)

Equipment

  • 1 Immersion blender

Ingredients
  

  • 1 cup cannellini beans or white kidney beans; canned & drained
  • ½ shallot finely chopped
  • 3 cloves roasted garlic
  • salt & pepper to taste
  • 1 lemon juiced
  • 3 tbsp oil plus more as needed

Instructions
 

  • Heat oil in a pan and soften the shallot and garlic (5 mins).
  • Stir in the beans and warm through (2–4 mins).
  • Remove from heat, blend with lemon juice and more oil until creamy.
  • Season with salt to taste.
