Pesto Cashew Dip

Quick dip for a summer Crudités

Equipment

  • 1 Food Processor or hand-blender

Ingredients
  

  • 1 tsp lemon juice
  • 2 tbsp pesto
  • 2 tsps water
  • cup cashews
  • 1 tsp oil
  • pinch salt & pepper
  • 1 tsp nutritional yeast

Instructions
 

  • Soak cashews in hot water until soft (20mins). Then drain water.
  • Place cashews, pesto, lemon juice, water, oil, nutritional yeast, salt and pepper into a food processor and blend until smooth.
  • Place in small bowl and serve
