roasted garlic bouillon

Trini green seasoning

fresh ginger
or 1 knob of fresh ginger; grated

add more if needed
Instructions
In a Dutch oven, bring roasted garlic bouillon to a boil. Add miso paste and stir until dissolved.
Add shallot, garlic, green seasoning, grated ginger, salt, chicken carcass, and water. Add more water if needed to cover bones.
Cook on medium heat, partially covered for 1 hour.
Strain through a sieve, discarding solids. A few bits of seasoning are fine. Let cool.
Transfer to heat proof containers for storage
Notes
Yield: approximately 3 cups of stock.
Store stock in the fridge for up to 2 weeks or freeze for up to 2 months.
